Green Bean Salad with Sesame and Cilantro

Ingredients

  • 600 g green beans
  • 1 cm ginger
  • 1 Garlic clove
  • 2 tbsp sesame seeds
  • 1 tbsp butter
  • 2 tbsp peanut oil
  • 3 tbsp dark soy sauce
  • 1 tbsp Rice vinegar
  • 1 tsp sugar
  • Salt
  • Pepper
  • 1 tsp finely chopped cilantro

Instructions

    Wash, trim, and optionally halve the beans. Blanch in plenty of salted water for 6-10 minutes. Drain and shock with ice water. Peel and finely chop the garlic; peel and dice the ginger. Sauté both in butter until fragrant, then add peanut oil and the beans.

    Deglaze with soy sauce and vinegar. Stir in sesame seeds, season with sugar, salt, and pepper, fold in cilantro, divide into bowls, and serve warm or cold.
