Green Bean Pasta

Ingredients

  • 250 g green beans
  • 150 g whole wheat spaghetti
  • Salt
  • 20 g Parmesan cheese (1 piece)
  • 1 tbsp pine nuts
  • 2 tbsp pesto verde
  • Pepper

Instructions

    Cook pasta according to package directions in plenty of boiling salted water until al dente.

    Trim, wash, and cut the green beans crosswise into halves or thirds depending on their length. Cook the beans in boiling water over medium heat for 7–8 minutes until al dente.

    Grate Parmesan cheese. Toast pine nuts in a pan over low heat, stirring constantly, until golden brown.

    Drain pasta and beans, reserving 1–2 tbsp of pasta cooking water.

    Add pasta, beans, and pasta water to the pan with the pine nuts. Mix with pesto and cheese on the still hot stovetop. Season with salt and pepper and serve.
