Ingredients

  • 1 kg green asparagus
  • Salt
  • 1 bunch radishes
  • 3 tbsp Lemon juice
  • 2 tbsp Rapeseed oil
  • Pepper (freshly ground)

Instructions

    Wash the asparagus, peel the lower third and trim the ends. Boil in salted water for about 10 minutes, then lift out and drain.

    Meanwhile wash, clean and finely dice the radishes. Roughly chop 2 tbsp of radish leaves. Mix the diced radishes and chopped leaves with lemon juice and oil, season with salt and pepper, and taste. Arrange the asparagus on plates topped with radish salsa and serve.
