Ingredients

  • 500 g Green Asparagus
  • Salt
  • 350 g whole wheat penne
  • 3 tbsp freshly squeezed lemon juice
  • Pepper
  • 4 tbsp olive oil
  • 250 g Cherry Tomatoes
  • 80 g pitted black olives

Instructions

    Wash the asparagus, peel the lower third and trim the woody ends. Cut the stalks into pieces and cook in boiling salted water for about 8 minutes, then drain. Set aside some of the cooking water.

    Cook the pasta according to package instructions in plenty of boiling salted water until al dente, then strain and let drain.

    Whisk 5 tbsp of asparagus cooking water with lemon juice, salt, pepper, and olive oil. Wash and halve the tomatoes. Halve the olives. Mix the pasta with the salad sauce, asparagus, olives, and cherry tomatoes. Serve the pasta salad with green asparagus warm.
