Ingredients
- 2 kg asparagus
- Lemon (juice)
- sugar
- 2 egg yolks
- 125 g butter
- 150 g Sour cream
- Salt
- Pepper
- 2 tsp Sesame seeds
- 0.5 handful watercress

Wash the asparagus thoroughly and trim the ends. Bring salted water with a pinch of sugar to a boil and cook the asparagus for about 12 minutes. Remove and drain, then roll in sesame seeds if desired.

For the sauce whisk lemon juice with egg yolks over a double boiler until frothy. Gradually stir in liquid butter until the sauce is creamy. Season with salt and pepper. Enrich the warm sauce with sour cream.
