Ingredients

  • 1 bundle green asparagus
  • 1 bundle white asparagus
  • 1 kg potatoes
  • Salt
  • 6 egg yolks
  • 125 ml white wine
  • Lemon juice
  • 1 bundle mixed herbs (e.g., marjoram, chives, parsley)
  • Salt

Instructions

  1. 1.

Wash the potatoes and cook them for about 30 minutes.

  2. 2.

Trim the ends of the white asparagus and peel the lower third of the green asparagus. Simmer the white asparagus in salted water for about 10 minutes, then add the green asparagus and simmer together for another 10 minutes.

  3. 3.

In the meantime, whisk the egg yolks until frothy, add the white wine, and whisk over a double boiler (do not let it get too hot). Remove from heat, stir in chopped herbs, lemon juice, and salt to taste.

  4. 4.

Arrange the asparagus with the boiled potatoes on a plate, pour the sauce over them, and serve.
