Ingredients

  • Tsatsiki
  • 200 g long-grain rice
  • Salt
  • 500 g pork (cutlet meat)
  • 2 tsp dried oregano
  • pepper (ground)
  • 1 tbsp Lemon Juice
  • 6 tbsp Olive oil
  • 600 g pork (cutlet meat)
  • 1 head Lollo bionda lettuce
  • 2 Tomatoes
  • 2 red onions
  • 1 yellow bell pepper
  • 0.5 cucumber
  • 2 tbsp chopped parsley
  • 4 pita breads

Instructions

    Cook the rice in a 1:1 ratio of boiling salted water for about 20 minutes. Meanwhile, make a marinade from oregano, pepper, salt, lemon juice and 3 tbsp olive oil. Wash, pat dry, cut the pork into 2 cm cubes and marinate for 25 minutes. While the pork marinates, wash, dry and tear the lettuce into bite‑sized pieces.

    Wash the tomatoes, remove stems, quarter them and slice into thin strips. Peel and halve the onions, then slice into fine strips. Wash the bell pepper, halve it, remove seeds and dice into 0.5 cm cubes. Peel, halve and seed the cucumber, then dice into 0.5 cm cubes.

    Heat 1 tbsp oil in a pan and sauté the pepper and cucumber cubes for 2 minutes, then stir in chopped parsley and combine with the cooked rice. Thread the marinated pork onto skewers and sear in a hot pan on all sides for 3‑5 minutes until crisp.

    Place the pita breads in a preheated oven for about 5 minutes, remove, fold them half‑round. Let cool slightly, then top each with lettuce, tomato strips, onion slices and a souvlaki skewer. Place the cooked rice on a warmed plate, set the souvlaki‑pita on top, and serve with a small bowl of tzatziki.
