Greek-Style Ground Meat Balls with Tomato Sauce

- 2 Garlic cloves
- 2 tbsp olive oil
- 50 ml dry white wine
- 500 g canned diced tomatoes
- 2 tbsp freshly chopped herbs (oregano and thyme)
- 1 pinch sugar

- 1 stale roll

- 600 g lamb ground meat

For the sauce, peel and finely dice the onion and garlic. Sauté in hot oil for 1-2 minutes until translucent. Deglaze with wine, add tomatoes, and simmer gently for about 10 minutes while stirring occasionally. Finally add herbs and season with sugar, salt, and pepper.

To make the meatballs, soak the roll in lukewarm water. Peel and finely chop onion and garlic; sauté in 1 tbsp oil until translucent. Remove from heat and let cool slightly. Mix in egg, parsley, and squeezed bread into the lamb meat, adding breadcrumbs if needed to achieve a firm but not too soft dough. Season with salt, cinnamon, and pepper, shape small rolls, and fry in hot oil for 5-6 minutes until golden brown.
