Ingredients

  • 1 rabbit (prepped, about 1.5 kg)
  • 4 tbsp olive oil
  • 2 stalks celery
  • 2 carrots
  • 2 parsley roots (or parsnips; knollensellerie)
  • 150 g pearl onions
  • 2 onions
  • 2 Garlic cloves
  • 2 tbsp Tomato paste
  • 50 g bacon strips
  • 500 ml dry white wine
  • 2 pimento seeds
  • 5 peppercorns
  • 5 coriander seeds
  • 2 fresh bay leaves
  • 3 thyme sprigs
  • Salt
  • black pepper

    Cut the rabbit into portions and brown them in 2 tbsp hot oil on all sides, then remove from the pot.

    Wash, trim, or peel all vegetables and dice them. Leave the pearl onions whole. Sauté the vegetables for 5 minutes in the remaining hot olive oil in the pot, season with salt and pepper, stir in tomato paste and bacon, and deglaze with white wine. Add ground pimento, peppercorns, coriander seeds, bay leaves, and torn thyme leaves; bring to a boil, then return the rabbit pieces. Cover and simmer gently over low heat for about 1 hour. Season with salt and pepper before serving.
