Gratinated Figs
The gratinated figs from Spoonsparrow are irresistibly tender and perfect as a high-end dessert!
Ingredients
- 4 figs
- 1 tbsp Maple Syrup
- 2 tbsp almond slivers
- 20 g butter (1 tbsp)
- 0.5 Organic lemon
- 1 egg
- 100 g low‑fat quark
- 1 tbsp coconut palm sugar
- 1 tsp Cornstarch
- Salt
Instructions

Wash the figs and remove the stem ends.

Make a crosscut in each fig, press slightly together, and place them in a small baking dish.

Drizzle maple syrup over the figs.

Evenly sprinkle almond slivers on top. Melt butter in a small saucepan. Wash lemon, dry rub it, and finely grate its zest.

Separate the egg. Whisk yolk, quark, melted butter, lemon zest, half of the coconut palm sugar, and cornstarch into a creamy mixture.

Beat egg white with a pinch of salt until stiff peaks form, adding remaining sugar gradually.

Carefully fold the meringue into the quark mixture using a wooden spoon.

Spoon the mixture over the figs. Place the baking dish on a tray and bake under a preheated oven grill at the lowest rack for 4–5 minutes until golden brown (gratin). Dust with powdered sugar if desired and serve.
