Grapefruit Salad with Pistachio Dressing

Spoonsparrow and American Pistachio Growers (APG) present: Grapefruit salad with pistachio dressing – a light treat!

Ingredients

  • 450 g salad leaves
  • 2 Grapefruits
  • 1 bunch Coriander
  • 2 Garlic cloves
  • 0.5 Red chili pepper
  • 2 limes
  • 1 Avocado
  • Pinch Salt
  • 75 ml olive oil
  • 2 handfuls American pistachios (peeled)

Instructions

    Wash and dry the salad leaves, cut into bite‑size pieces. Segment the grapefruits, mix with the salad, and arrange on plates.

    For the dressing, wash and dry the coriander; pulse 30 g in a food processor. Peel the garlic and add it with the chili pepper.

  3. 3.

    Squeeze the limes and scoop out the avocado flesh. Combine both with a pinch of salt, olive oil, and one handful of pistachios in the processor and blend into a creamy dressing.

    Coarsely chop the remaining pistachios and coriander. Toss the salad with the dressing, sprinkle chopped coriander and pistachios on top, and serve.
