Grapefruit Salad with Amaretto Mascarpone Cream

Ingredients

  • 2 tbsp almond sticks
  • 4 pink grapefruits
  • 250 g mascarpone
  • 1 packet Bourbon vanilla sugar
  • 1 tbsp sifted powdered sugar
  • 2-3 tbsp amaretto
  • 20 g meringue shells (1 shell)
  • lemon balm for garnish

Instructions

    Toast the almond sticks in a dry pan until golden, then let cool on a plate.

    Peel and segment the grapefruits, reserving the juice. In a bowl, whisk mascarpone with bourbon vanilla sugar, powdered sugar, amaretto, and grapefruit juice until smooth.
