Ingredients

  • 4 Eier
  • 2 EL mayonnaise
  • 2 EL crème fraîche
  • 1 Tomate
  • 2 rote Zwiebeln
  • 1 EL frisch gehacktes Basilikum
  • 1 EL Weißweinessig
  • Pfeffer
  • Salz
  • 1 EL Pflanzenöl
  • 12 Blätter junger Spinat
  • 12 Scheiben Baguette

Instructions

    Hard boil the eggs, cool and peel. Then halve them, remove the yolks and finely chop the whites. Mix the yolks with mayonnaise and crème fraîche until smooth. Wash the tomato, quarter it, deseed and dice into small cubes. Peel the onions; slice one thinly into strips, dice the other into fine cubes. Combine the onion cubes with basil, tomato, and chopped egg white in the egg salad mixture. Season with vinegar, pepper and salt.

    Sauté the onion strips in a hot pan with oil for 2-3 minutes until translucent. Remove from heat.

    Rinse the spinach leaves, pat dry. Place one leaf on each baguette slice and top with 1 EL of the egg salad. Garnish with onion strips and serve.
