Grandma's French Onion Soup

Ingredients
- 1 kg onions
- 50 g butter
- 1 l vegetable broth
- 250 ml dry white wine
- nutmeg
- Thyme (1 tsp fresh or ½ tsp dried)
- a pinch ground caraway
- 50 g raclette cheese (grated)
- 1 bunch parsley
- 4 slices baguette
- 2 Garlic cloves
- Salt
- Pepper (ground freshly)
Instructions

Peel the onions and slice them into thin strips. In a pot, heat the butter and sauté the onions until translucent. Add broth and wine, then stir in nutmeg, thyme, and caraway; let the soup simmer for 25-30 minutes.

Toast the baguette slices and rub each with a peeled garlic clove. Press the remaining garlic cloves into the soup, stirring well. Season the soup with salt and pepper to taste, then ladle it into heat‑proof bowls.

Place the toasted bread on top of the soup, sprinkle grated raclette cheese over the bread, and broil for about 5 minutes until the cheese melts.
