Grandma's Fish Soup

Grandma’s fish soup from Spoonsparrow always tastes wonderfully good—see for yourself!

Ingredients

  • 400 g mixed fish fillet (cod, plaice, sole and others)
  • 2 tbsp lemon juice
  • Salt
  • 500 g fish scraps (heads, tails, bones)
  • 1 pack frozen soup vegetables
  • 1 bay leaf
  • 4 white peppercorns
  • 500 ml water
  • 250 ml dry white wine
  • 1 crushed garlic clove
  • 1 pinch saffron
  • 1 pack light sauce
  • 125 g mussel meat
  • 200 g squid rings
  • 200 g deep‑sea crab
  • 2 tbsp chopped parsley

    Clean and season the fillet pieces. For the stock, combine the fish scraps with the soup vegetables, bay leaf, salt, peppercorns and water; simmer uncovered for 20 minutes. Strain through a sieve into a pot. Add wine, garlic, saffron and the fillet pieces.

    Let it steep for 8 minutes, then remove and keep warm. Stir in the light sauce, add mussel meat, squid rings and crab to the soup. Let Grandma’s fish soup simmer for another 5 minutes. Taste, garnish with parsley, and serve immediately.
