Ingredients
- 250 ml Water
- 0.5 tsp Salt
- 50 g butter
- 150 g flour
- 1 packet vanilla sugar
- 5 eggs
- 1 tsp Baking powder
- 300 g pitted cherries
- 300 g whipping cream
- 1 packet stabilizer
- 2 packets vanilla sugar
Instructions
-
1.
Boil the water in a large pot, add salt, then butter and vanilla sugar until dissolved. Stir in all of the flour at once, whisking constantly until lumps form. Let the dough brown for about 2 minutes on each side until a white film appears on the bottom, then transfer to a mixing bowl and gradually fold in the eggs one at a time, ensuring each is fully incorporated before adding the next.

2.
Line a baking sheet with parchment paper or grease it lightly and dust with flour. Spoon the dough into a piping bag fitted with a large star tip and pipe tennis-ball-sized rosettes onto the sheet. Bake at 200 °C for about 20 minutes until puffed and golden brown, then remove and cool.
