Grandma's Cauliflower Soup
Spoonsparrow’s Grandma’s cauliflower soup is a true classic that always tastes great.
Ingredients
- 1 onion
- 2 Garlic cloves
- 1 Carrot
- 4 tomatoes
- 1 small cauliflower
- 4 tbsp olive oil
- 1 l vegetable broth
- 3 bay leaves
- 1 small chili pepper
- Salt
- freshly ground pepper
- 2 tsp fresh thyme leaves
- 100 ml White wine
- 100 ml heavy cream
- 50 g grated Parmesan
Instructions

Peel and finely dice the onion and garlic. Boil the tomatoes, peel, quarter, seed, and dice them.

Clean, wash, and cut the cauliflower into florets.

Cook the cauliflower florets in vegetable broth for about 10 minutes until just tender.

Remove from the broth.

Heat olive oil in a pot. Sauté the onion, garlic, and carrot until softened.

Add the tomato, bay leaves, and chili pepper. Stir and heat vigorously.

Deglaze with the broth. Add about two-thirds of the cauliflower to the soup and simmer for approximately 15 minutes.

Remove the chili pepper and bay leaves, then puree the soup.

Stir in the wine, cream, and thyme leaves. Reheat the soup well.

Add the remaining cauliflower florets. Serve sprinkled with Parmesan.
