Grandma's Carnival Doughnuts

Ingredients

  • 500 g flour
  • 40 g sugar
  • 1 packet Bourbon vanilla sugar
  • 1 untreated lemon
  • 1 pinch Cardamom
  • 30 g fresh yeast
  • 125 ml lukewarm milk
  • 2 eggs (medium size)
  • 1 egg yolk
  • 100 g Soft Butter
  • 200 g apricot jam
  • 1 l cooking oil (or coconut fat)
  • 150 g fine sugar

Instructions

    Add flour, sugar, vanilla sugar, grated lemon zest, and cardamom to a bowl. Crumble yeast into the lukewarm milk and stir. Add the yeast mixture, eggs, yolk, and butter. Knead with the dough hooks of an electric hand mixer and let rest covered in a warm place for 30 minutes.

    Afterwards knead again vigorously. Roll out the dough on a floured surface to about 5 mm thickness. On one half of the dough mark 6 cm circles and place a teaspoon of apricot jam in each center. Fold the other half over and cut out 6 cm circles around the jam piles, pressing edges together well. Roll out remaining dough and cut similarly. Place doughnuts on parchment paper and let rise for 15 minutes.

    Meanwhile heat oil for frying and fry the doughnuts in batches for about 5-6 minutes until golden brown, turning once. Remove with a slotted spoon and drain on kitchen paper. Immediately roll in sugar.
