Ingredients
- 300 g pearl barley
- Salt
- 600 g beef (from the shank)
- 1 Zucchini
- 300 g fresh wax beans
- 2 tbsp Vegetable oil
- 1 tbsp flour
- 1 tbsp Tomato Paste
- 150 ml dry red wine
- 350 ml beef broth
- pepper (ground)
- Sweet Paprika Powder

Rinse the pearl barley under cold running water, drain and cook in boiling salted water for 40-45 minutes. In the meantime wash, pat dry, trim and cut the beef into bite‑sized pieces. Wash the zucchini, trim it, quarter lengthwise and slice into 1 cm thick rounds.

Wash, trim and snap off the ends of the wax beans; blanch them in boiling salted water for 2 minutes. Remove, shock in cold water and drain well. In a pot, sear the beef in hot oil on all sides, dust with flour, stir in tomato paste, let it brown slightly, then deglaze with red wine.

Add the zucchini and wax beans, pour in the broth, season with salt, pepper and paprika, and simmer over medium heat for about 15 minutes. Taste again, serve in preheated bowls and top with the cooked, drained pearl barley.
