Ingredients
- 0.25 bundle thyme
- 600 g duck breast fillet (with fat layer)
- 200 g duck fat (or goose fat substitute)
- 0.1 l white wine
- 3 bay leaves
- 2 tbsp salt
- 1 tsp sugar
- pepper (ground)

Wash the thyme, shake dry and tear into small pieces.

Separate the duck breasts from the fat layer. Rub the meat with salt, sugar and pepper, wrap tightly in foil and let marinate 24 hours in the refrigerator. Cut the fat into very fine cubes and render in a pot over gentle heat. Add the duck fat, wine, bay leaves and herbs. Remove the goose meat from the foil, cut lengthwise against the grain into very fine pieces and simmer gently for about 2 hours in the fat mixture until tender.

Transfer the mixture to a bowl or ramekins, cover and refrigerate until cold.
