Ingredients

  • 8 queen pastry shells (order from baker)
  • 1 kg mushrooms
  • 4 onions
  • 1 Garlic clove
  • 4 tbsp butter
  • Salt
  • Pepper
  • 1 tbsp flour
  • 150 g Frozen Peas
  • 200 ml instant vegetable broth
  • 300 ml whipping cream
  • 200 g Cream cheese
  • 1 tbsp white wine
  • Lemon
  • a pinch sugar
  • chives (for garnish)

Instructions

    Warm the pâtés in a preheated oven at 80°C.

    Clean, trim and cut mushrooms into halves or quarters depending on size. Peel and finely dice onions and garlic. Heat butter in a large pan. Sauté mushrooms, onions, and garlic for about 10 minutes until all liquid evaporates. Season with salt and pepper.

    Sprinkle flour over the mixture and briefly sauté. Gradually pour in broth and cream while stirring, then bring to a boil. Stir in cream cheese. Add peas and let the ragout thicken into a creamy consistency. Season with salt, pepper, white wine, lemon juice, and sugar. Fill the pâtés with the mushroom ragout and serve garnished with chives.
