Goose Breast and Goose Drumsticks

Crispy and tender: How to prepare the perfect goose breast and drumsticks for Christmas with Spoonsparrow.

Ingredients

  • 1 goose breast
  • 2 goose drumsticks
  • Salt
  • Pepper (freshly ground)
  • 2 onions
  • 1 parsley root
  • 1 Carrot
  • 20 g butter
  • 10 g fresh parsley (0.5 bunch)
  • 1 Tbsp dried sweet woodruff
  • 500 ml vegetable stock
  • 1 Orange (juice)
  • 1 tsp Honey

Instructions

    Wash and pat dry the goose drumsticks and breast, then season all sides with salt and pepper.

    Peel the onions; cut onions, parsley root, and carrot into large pieces. Place butter in a roasting pan. Add the vegetables and sauté over medium heat.

    Place the goose drumsticks and breast on top of the vegetables in the pan. Season with sweet woodruff. Pour in half of the vegetable stock. Roast in a preheated oven at 200 °C (180 °C fan‑forced; gas: level 3) for about 1½ hours, turning the meat occasionally and basting with the stock.

    Halve the orange and squeeze out 2 Tbsp juice. Warm the juice and dissolve honey in it. Brush this mixture over the goose drumsticks and breast and continue roasting for another 20–30 minutes. Remove from oven and keep warm. Strain the remaining stock, season to taste, and thicken with flour if desired. Serve with the meat.
