Goat Cheese Zucchini Quiche

Ingredients

  • 120 g cold butter
  • 200 g Flour
  • 1 pinch salt
  • 1 egg
  • flour (for dusting)
  • soft butter (for the pan)
  • 2 Zucchini
  • 200 g Cherry tomatoes
  • a handful arugula
  • 200 ml whipping cream
  • 400 g goat fresh cheese
  • 75 g grated hard goat cheese
  • 2 Eggs
  • Salt
  • pepper (ground)
  • a splash lemon juice

Instructions

    Quickly knead all dough ingredients together, shape into a ball and wrap in cling film; chill for about 1 hour.

    For the filling wash the zucchini, trim ends, slice thinly. Wash tomatoes, drain and halve them. Whisk cream with goat fresh cheese, grated goat cheese, and eggs; season with salt, pepper, and lemon juice.

    Preheat oven to 180°C fan.

    Roll out dough on a floured surface slightly larger than the pan. Line the quiche tin with dough. Arrange zucchini and tomatoes over the dough, then pour the cheese mixture on top.

    Bake in the oven for about 50 minutes until golden brown. Remove from oven and serve warm or at room temperature.
