Goat Cheese Pasta
Goat cheese pasta with sun-dried tomatoes: Whole wheat noodles are very filling due to the fiber and good for digestion.
Ingredients
- 2.1 oz sun-dried tomatoes (in oil)
- 1 small clove garlic
- 3 stems basil
- 2.8 oz whole wheat pasta (e.g. Linguine or Pappardelle)
- Salt
- Pepper
- 2.1 oz fresh goat cheese
Instructions

Drain the tomatoes in a sieve, reserving the oil in a small bowl.

Roughly chop the tomatoes with a sharp knife or cut them into strips.

Peel and finely chop the garlic. Wash, dry, and pluck the basil leaves. Roughly chop if desired.

Cook the pasta al dente in plenty of salted water according to package directions.

Meanwhile, measure out 2 tsp of the reserved tomato oil and warm it in a pan over low heat. Lightly sauté the garlic and tomatoes in the oil. Drain the pasta, reserving some pasta water. Add the pasta to the pan. Crumble the goat cheese over it with your fingers and add pasta water and basil. Mix everything well, season with pepper and serve.
