COUSCOUS-Vegetable Stir-fry with Curry: This meat-free couscous recipe is packed with iron. The vegetable stir-fry is a great meal or side dish.

Ingredients

  • 250 g Broccoli
  • 200 g red bell peppers (1 red bell pepper)
  • 100 g carrots (1 carrot)
  • 1 clove garlic
  • 2 tbsp olive oil
  • 75 g peas (frozen)
  • 1 tbsp curry powder
  • 1 tsp harissa
  • Salt
  • Pepper
  • 200 ml vegetable broth
  • 100 g couscous (preferably whole grain)
  • 2 scallions

Instructions

    Wash and chop the broccoli. Cut off the thick stem, peel it, and dice it into 1 cm cubes.

    Cut the remaining broccoli into florets.

    Quarter, deseed, wash, and dice the bell pepper into 1 cm pieces. Wash, peel, and dice the carrot into 5 mm cubes.

    Peel the garlic and slice it thinly.

    Heat the oil in a pan. Fry the broccoli, bell pepper, carrot, and garlic over medium heat for about 5 minutes.

    Add the peas, curry powder, and harissa. Season with salt and pepper.

    Pour in the broth, bring to a boil, and let it cook for 1 minute.

    Sprinkle in the couscous, stir, and let everything come to a boil briefly. Cover and let it swell for 5 minutes on the off heat.

    Meanwhile, wash, clean, and slice the scallions into thin rings.

    At the end of the cooking time, fluff the couscous lightly with a fork. Sprinkle the couscous vegetable stir-fry with scallions and serve.
