- 2 ripe avocados
- 1 small Shallot
- 1 Garlic clove
- 2 tbsp olive oil
- Salt
- Pepper (freshly ground)
- Lemon juice
- 250 g goat cream cheese
- 1 tbsp heavy cream
- 4 tbsp chive rolls

Halve the avocados, remove the pits, squeeze the flesh out of the skins and mash with a fork. Peel and finely chop the shallot and garlic, then mix into the avocado with olive oil. Season with salt, pepper, and a splash of lemon juice.

Whisk the goat cream cheese with heavy cream until smooth; season with salt and pepper. Form small balls and roll them in chives. Skewer on wooden sticks, spread the avocado mousse onto small glasses, and arrange the chive-coated balls atop for serving.
