Ginger Stars

The Ginger Stars from Spoonsparrow are the perfect cookies for those who enjoy a light kick of spice.

Ingredients

  • 20 g ginger (or 1 tsp ginger powder)
  • 400 g wheat flour type 1050 (+ 2 tbsp for handling)
  • 1 tsp Baking powder
  • 70 g whole cane sugar
  • 1 tsp cinnamon
  • a pinch of salt
  • 190 g cold butter
  • 0.5 Vanilla bean
  • 2 Eggs

Instructions

    Peel the ginger and finely chop it. Sift 400 g flour with baking powder onto a work surface. Mix sugar, cinnamon, and a pinch of salt and spread over the flour. Cut butter into small pieces and distribute on the flour mixture. Split the vanilla bean lengthwise and scrape out the seeds with a knife.

    Add vanilla seeds and ginger to the flour mix, beat eggs in the center. Quickly knead by hand into a smooth dough; add cold water if needed. Wrap dough in a damp kitchen towel and chill for 1 hour.

    After chilling, divide dough on a floured surface into two pieces, knead again. Roll out thinly, cut stars with various sized cutters, and place on two baking sheets lined with parchment paper.

    Bake in a preheated oven at 180 °C (fan 160 °C; gas 2–3) for 10–12 minutes until golden brown. Remove, lift from sheet with parchment, and cool.
