Ingredients

  • 3 tbsp sugar
  • 100 ml dessert wine
  • 400 g rhubarb
  • 1 tbsp chopped ginger
  • 400 g yogurt
  • 1 ginger plum for garnish (or candied ginger)

Instructions

    Wash, trim and cut the rhubarb into pieces. Bring the wine, sugar, rhubarb and ginger to a boil. Simmer covered for about 5 minutes until the rhubarb is tender but still holds its shape. Strain through a sieve and let cool while catching the wine.

    Briefly blend the rhubarb. Fill glasses with rhubarb and wine (up to 4 tbsp). Mix the remaining wine with yogurt and pour over the rhubarb. Chop the ginger plums, use them to garnish the dessert, and chill for about 30 minutes before serving.
