Ingredients
- 50 g ginger
- 150 g butter
- 70 g honey
- 1 egg
- 150 g flour
- 75 g buckwheat flour
- 50 g ground almonds
- 0.5 pinch cinnamon
- 0.5 pinch cloves
- 50 g chocolate glaze

Peel and finely chop the ginger. Beat the butter until fluffy, then stir in the egg and honey. Fold in the flour, almonds, and spices, knead the dough with your hands, and roll into three logs of 2.5 cm diameter. Wrap each log individually in foil and chill for 1 hour. Slice finger‑thick rounds from the logs, place on a parchment‑lined tray, and bake at 180 °C fan-forced for about 15 minutes until golden brown.

For decoration melt chocolate over a double boiler, pour into a small piping bag, and pipe fine chocolate lines onto the cookies.
