Ingredients
- 1 Shallot
- 4 Garlic cloves
- 2 tbsp sesame oil
- 2 tsp brown sugar
- 1 tsp rice flour
- 100 ml soy sauce
- 3 tbsp rice wine
- chili flakes
- Salt
- 4 beef steaks about 250 g each (e.g., loin)
- coriander leaves for garnish
Instructions

Peel and finely chop the shallot and garlic. Sauté together in 1 tbsp hot oil in a pan until lightly golden brown. Stir in the sugar and flour, then deglaze with soy sauce and rice wine. Let simmer gently for a few minutes until slightly thickened. Season with chili flakes and salt.

Rinse the meat, pat dry, and sear in a hot pan 2 minutes per side (longer or shorter depending on desired doneness). Then finish cooking in a preheated oven on a rack (with a fat pan underneath) for about 10 minutes. Plate the steaks, pour sauce over them, and garnish with coriander leaves.
