Chicken Sweet and Sour with Noodles

Ingredients
- 350 g Chicken breast fillet
- 2 tbsp Light soy sauce
- 0.5 tsp pepper
- Paprika (1 red and 1 green)
- 2 cloves garlic
- 5 tbsp vegetable oil
- 4 tsp starch
- 4 tbsp ketchup
- 2 tbsp fish sauce
- 3 tbsp rice wine
- 4 tbsp sugar
- 250 g Chinese egg noodles

Wash the chicken, pat dry, slice into strips, mix with soy sauce and pepper, and marinate in the refrigerator for 1 hour.

Halve the peppers, remove seeds, wash, cut into pieces. Peel the garlic and finely chop.

Bring plenty of water to a boil in a large pot, add noodles and cook for 4 minutes, drain and set aside.

Heat 3 tbsp oil in a wok, mix chicken strips with 2 tsp starch, fry over medium heat for 4 minutes, remove with a slotted spoon and keep warm.

Heat the remaining oil in the wok, briefly sauté garlic while stirring, add peppers, stir-fry on high heat for 2 minutes. Add ketchup with fish sauce, pour in 1/8 l water, bring to a boil once. Season with vinegar and sugar, whisk in the remaining starch mixture, combine with chicken pieces, mix with noodles, briefly reheat, plate and serve.
