Garlic Soup with Toasted Bread

Ingredients

  • 18 cloves of garlic
  • 2 onions
  • 6 tbsp Olive oil
  • 1 sprig sage
  • 2 sprigs thyme
  • 1 l vegetable broth
  • Salt
  • ground pepper
  • 2 Bay leaves
  • 4 slices toast bread
  • 2 tbsp chives

Instructions

    Peel and roughly chop 10 cloves of garlic. Wash and dry the herbs, then shake them out. Peel the onions, halve them, dice finely, and sauté in 2 tbsp hot oil. Bring the broth to a boil with salt, pepper, bay leaves, sage, and thyme; add the garlic and simmer gently for about 15-20 minutes.

    Cut the bread into strips and fry in the remaining hot oil until golden yellow. Add the remaining garlic and cook together. Drain on kitchen paper and lightly season with salt. Remove the herbs from the soup, puree it, season with salt and pepper, taste, and garnish with the fried garlic cloves and chives. Serve plated with the bread strips.
