Spicy Vegetable Soup Portuguese Style

Ingredients
- 150 g celery sticks
- 1 onion
- 2 carrots
- 200 g potatoes (peeled)
- 200 g kohlrabi (peeled)
- 2 piri-piri peppers
- 1 Garlic clove
- 2 tbsp plant oil
- 2 tbsp vinegar
- 2 tbsp Tomato paste
- 1 can peeled tomatoes (about 400 g)
- 600 ml Vegetable Broth
- 100 g peas (frozen)
- 100 g corn (canned)
- Salt
- pepper (ground)
- sugar
- Cayenne pepper
- 1 tbsp freshly chopped parsley

Wash, trim and cut the celery into diagonal pieces. Peel and halve the onion lengthwise, then slice it crosswise into thin strips. Peel and chop the carrot. Dice the potatoes and kohlrabi. Wash, trim and finely chop the piri-piri peppers.

Peel the garlic and finely chop it as well; sauté with the chili and onion in hot oil until translucent. Add the vegetables (except peas and corn) and stir briefly, then mix in vinegar and tomato paste.

Pour in the tomatoes with their juice and lightly crush them with a spoon. Add the broth and season with salt, pepper, sugar, and cayenne pepper. Bring to a boil and simmer gently for about 20 minutes.

Add the peas and corn and let the soup continue cooking for another 5-10 minutes. Taste and serve in bowls garnished with parsley.
