Ingredients

  • 4 rabbit legs
  • Salt
  • freshly ground pepper
  • 1 young garlic clove
  • 4 tbsp olive oil
  • 1 bundle thyme
  • mint
  • 100 ml White wine
  • 250 ml clear broth
  • 6 tomatoes
  • 1 can artichoke hearts
  • 100 g black olives

Instructions

    Rub the rabbit legs with salt and pepper. Remove the outer skin of the garlic bulb, then cut it lengthwise into segments. Heat olive oil in a braising pot. Brown the rabbit legs all around. Add the garlic and cook together. Rinse the herbs and add them. Deglaze with white wine. Pour in the broth. Cover and simmer for 20 minutes over medium heat.

    Score the tomatoes crosswise, blanch for 1 minute in boiling water, then shock in cold water to peel. Halve the tomatoes. Drain the artichokes. Add the tomatoes, artichokes and olives to the rabbit and simmer for another 40 minutes. Season with salt and pepper.
