Ingredients
- 3 hard‑boiled egg yolks
- 2 tbsp white wine vinegar (30 ml)
- 4 tbsp olive oil (40 ml)
- 100 ml Vegetable broth
- 1 tbsp medium‑sharp mustard (20 g)
- 1 tbsp honey (15 g)
- 1 sprig dill
- Salt
- ground pepper
- 1 tsp lemon juice (5 g)

Place eggs in a pot, cover with cold water, bring to a boil, simmer for 9–10 minutes, then shock in cold water. Peel the eggs and blend with vinegar, oil, broth, mustard, and honey.

Wash dill, shake dry, trim tips, and finely chop. Stir into the mustard dressing and season with salt, pepper, and a splash of lemon juice.
