Garlic Halibut

Ingredients

  • 4 halibut steaks (about 160 g)
  • 8 garlic cloves
  • soy sauce
  • coarsely ground black pepper
  • extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • Salt
  • 2 lemons

Instructions

    Pat the halibut steaks dry with kitchen paper, place them on a plate and drizzle each with 1-2 tbsp soy sauce. Let sit for 5 minutes. Peel the garlic and slice lengthwise into thin rounds.

    Heat 4 tbsp oil in a pan and fry the garlic slices until golden yellow; remove immediately to avoid bitterness. Set aside. Pat the fish steaks lightly dry, reserving the liquid. In the hot oil, sear the steaks 2-3 minutes per side until golden brown. Remove and place on warmed plates.

    Add the reserved liquid and garlic to the pan, bring to a brief boil. Spoon the garlic and pan drippings over the halibut. Season generously with pepper, add salt if desired, and drizzle with lemon juice. Serve immediately. Offer lemon wedges as preferred.
