Garlic Breadsticks

Ingredients
- 1 cube yeast (42 g)
- 150 ml olive oil
- 2 tsp fine sea salt
- 1 tbsp honey
- 700 g spelt flour type 1050
- 300 g spelt whole‑grain flour
- 4 fresh garlic cloves
- 1 sprig rosemary
- 60 g grated Emmental cheese

Gather all ingredients and let them come to room temperature.

Crush the yeast into a bowl and pour about 650 ml lukewarm water over it. Stir in 80 ml oil, salt, and honey until the yeast is fully dissolved. Add the flour to a bowl and make a well in the center. Pour the yeast mixture in and knead from the center into a firm dough. Transfer the dough to a floured surface and knead until smooth and elastic; add more flour if it sticks. Place in a bowl, cover, and let rise in a warm spot for about 45 minutes.

Peel and finely chop the garlic. Wash the rosemary, shake dry, pluck leaves, and finely chop. Mix with the garlic and 4 tbsp olive oil.

Knead the dough again on a floured surface, divide into four pieces. Shape each piece into a long strand and flatten slightly. Brush with the garlic‑oil mixture and begin twisting each strand into a braid from the middle. Pinch the ends together firmly and place the loaves on a parchment‑lined baking sheet. Brush with remaining oil and sprinkle with cheese. Bake in a preheated oven at 220 °C (fan: 200 °C; gas: level 3–4) for about 20 minutes until golden brown.
