Fruity Red Cabbage

A juicy and delicious fruity red cabbage from Spoonsparrow is a particularly great side dish for Christmas meals.

Ingredients

  • 150 g onions
  • 600 g red cabbage (without large stems)
  • 40 g dried apricots
  • 2 tbsp olive oil
  • 40 g currants
  • 1 glass apple juice
  • 1 bay leaf
  • 0.5 tsp ground coriander
  • a pinch of cloves (about 1 tsp ground)
  • a pinch of allspice (about 1 tsp ground)
  • 0.5 tsp nutmeg flower
  • black pepper
  • Salt
  • 1 tbsp apple syrup
  • 100 ml Vegetable broth
  • 2 small tart apples
  • 2 tbsp lemon juice
  • 2 tbsp Red wine vinegar

Instructions

    Peel and finely dice the onion; cut the cabbage and apricots into thin strips.

    Sauté the onions in olive oil, then add the cabbage. Add currants, apricots, apple juice, bay leaf, coriander, cloves, allspice, nutmeg, pepper, salt, and apple syrup. Cover and simmer for about 15 minutes until just tender; add a splash of vegetable broth if needed.

    Cut the apples into wedges. Add them with lemon juice and red wine vinegar, simmer for another 3–5 minutes, then taste and adjust seasoning to finish the fruity cabbage.
