Ingredients

  • 600 g green asparagus
  • 500 g chicken breast fillet
  • 2 Garlic cloves
  • 4 Spring Onions
  • 5 tbsp sesame oil
  • 50 ml chicken broth
  • 40 g cashew nuts
  • 3 tbsp light soy sauce

    Wash the asparagus, peel the lower third and trim 1 cm from the bottom. Cut the stalks into about 3 cm pieces. Wash the chicken breast, pat dry with kitchen paper and slice crosswise. Peel and chop the garlic, wash, trim and cut the spring onions into rings.

    Heat the sesame oil in a wok and stir‑fry the asparagus for 1–2 minutes. Deglaze with broth and simmer while stirring until the liquid evaporates. Add the chicken slices, cashew nuts and spring onions, and cook for about 3 minutes while stirring. Deglaze with soy sauce and serve in small bowls.
