Fruitful Cheese Soup

Ingredients

  • 1 apple
  • 1 Shallot
  • 2 tbsp butter
  • 300 g cheddar
  • 200 ml cider
  • 300 ml milk
  • 300 g heavy cream
  • Salt
  • Pepper (freshly ground)
  • apple slice
  • thyme

Instructions

    Peel, quarter, core and dice the apple. Finely chop the shallot. Cube the cheese.

    Heat the butter in a pot and sauté the shallot until translucent, then add the apple and cook briefly. Add cider, milk, cream and cheese; bring to a boil and melt the cheese while stirring.

    Whisk the soup with an immersion blender until frothy and season to taste

    Serve garnished with apple slices and a sprig of thyme
