Fruitful Cabbage Wraps
Fruitful cabbage wraps with figs and oranges are the ideal snack for on-the-go or at home: they contain little fat but many vitamins.
Ingredients
- 4 tortillas
- 400 g medium cabbage (half a medium head)
- 2 oranges
- 75 g dried figs (4 dried figs)
- 30 g hazelnut kernels
- 1 Lime
- 200 g yogurt (1.5% fat)
- 1 tsp Honey
- Salt
- Pepper
Instructions
-
1.
Wrap each tortilla individually in aluminum foil and warm in a preheated oven at 100 °C (fan: 80 °C, gas: level 1) for about 10 minutes.
-
2.
Meanwhile cut the cabbage in half, remove the core, quarter it, and slice into fine strips. Rinse in a sieve and drain well.
-
3.
Peel the oranges so that all the white pith is removed. Cut the fruit segments between the membranes and roughly cube them; squeeze the membranes over a bowl to catch the juice.
-
4.
Remove stems from the figs, finely dice them, and mix with the orange juice.
-
5.
Chop hazelnuts with a large knife and toast them in a dry pan until golden brown.
-
6.
Halve the lime, squeeze its juice, and whisk it into a large bowl with yogurt, honey, and the toasted hazelnuts. Season with salt and pepper. Fold in the cabbage, oranges, and figs.
-
7.
Take the tortillas out of the foil, top each with the cabbage salad, roll tightly, cut diagonally in half, secure with toothpicks, and serve.
