Fruit‑Meat Skewers with Spinach Veggies

Ingredients

  • 600 g Spinach
  • Salt
  • 1 Garlic clove
  • 2 red onions
  • 2 tbsp sesame oil
  • 2 tbsp sesame seeds
  • Salt
  • Lemon juice
  • 500 g pork tenderloin
  • 2 Apricots
  • 1 red chili pepper
  • 2 tbsp Vegetable oil
  • Salt
  • 1 tbsp honey

Instructions

    Wash, trim and briefly blanch the spinach in salted water. Shock in ice water and squeeze out excess moisture. Peel the garlic and onions; finely chop the garlic and halve the onions into strips. Sauté in hot sesame oil for 1‑2 minutes. Mix in the garlic, sesame seeds and spinach and steam for 2‑3 minutes. Season with salt and lemon juice.

    Cut the pork into bite‑sized slices. Halve the apricots, pit them and cut into wedges. Alternate threading pork and apricot onto wooden skewers. Wash, trim and finely chop the chili pepper; mix with vegetable oil and brush over the skewers. Sprinkle with salt and sear in a hot pan for about 2 minutes per side. Finish by drizzling honey and letting it lightly caramelize. Arrange on a bed of spinach and garnish with fresh herbs if desired.
