Fruit Cake

Ingredients
- 240 g flour
- 160 g butter
- 80 g sugar
- 3 tbsp whipping cream
- 1 pinch salt
- 300 g Low-fat quark
- 200 g Sour Cream
- 1 packet vanilla pudding powder (for 500 ml)
- 2 Eggs
- 1 handful fresh cherries
- 2 yellow plums (or nectarines)
- 2 blue plums
- 1 packet clear gelatin
- 100 ml apple juice (clear)
- 150 ml water
- 1 tbsp sugar
Instructions

Put all dough ingredients in a bowl and knead with the hand mixer attachments into a smooth dough. Wrap in cling film and refrigerate for at least 30 minutes.

Wash and pit the cherries. Wash the plums, halve them, remove pits and cut into wedges.

Combine all topping ingredients in a bowl and whisk until smooth.

Roll out the dough between two sheets of foil slightly larger than the pan, line the tart pan with it, forming a rim. Pour in the quark cream and distribute or insert the different fruit varieties over each third of the surface.

Bake in a preheated oven at 200°C for about 45–50 minutes, covering with foil if necessary.

Remove the cake from the oven and let cool. Carefully lift out of the pan onto a plate. Mix the gelatin with apple juice and sugar until smooth, add water and bring to a boil while stirring; boil once more and pour over the fruit cake. Let set and serve with coffee.
