Frozen Lemon Slices

Ingredients
- 200 g sugar
- 1 stalk mint
- 6 untreated lemons
- 40 ml limoncello
- 1 Egg white

Add the sugar, 300 ml water and the rubbed mint to a pot. Simmer gently for about 5 minutes. Remove from heat.

Wash one lemon hot, pat dry and grate its zest. Halve all lemons and squeeze out the juice. Combine the juice with the zest and limoncello in the sugar syrup. Let cool and strain through a sieve. Whisk the egg white to half‑set and fold into the syrup. Pour into a shallow dish and chill, stirring occasionally, for about 3 hours until creamy frozen. Alternatively freeze in an ice cream maker.

Halve the lemon halves again and scoop out the remaining flesh with a spoon. Only the rind of the slices should remain. Freeze these pieces. Spread the creamy ice over them (best with a palette) and let freeze completely for another ~30 minutes.
