Friesian Candied Cookie

Ingredients

  • 500 g baking mix (for cookies)
  • 150 g butter
  • 6 tbsp heavy cream
  • 60 g brown candied sugar (crumbled)
  • 2 tbsp milk

Instructions

    Add the baking mix to a bowl. Add butter pieces and cream, then use a knife to break into dry crumbs. Quickly knead with hands into a smooth dough. Wrap dough in foil and refrigerate for 30 minutes.

    Roll dough on floured surface to 2-3 mm thickness. Sprinkle with 40 g candied sugar and roll over it with a rolling pin, pressing some sugar into the dough. Cut out round cookies (4 cm diameter) and place on parchment-lined baking sheets. Brush cookies with milk and sprinkle remaining candied sugar. Bake in preheated oven at 180°C (gas: level 2-3, convection: 160°C) for 8‑10 minutes.
