Fried Vegetables

As a finger food for in-between moments or as a side dish, the fried vegetables from Spoonsparrow are always well received.

Ingredients

  • 200 g Flour
  • 1 egg
  • 1 egg yolk
  • 200 ml water
  • Salt
  • 600 g mixed vegetables (cut into bite-sized pieces)
  • oil (for frying)
  • Lemon juice

Instructions

    Whisk 100 g flour with the egg, egg yolk, water and salt into a smooth batter and let it rest briefly.

    Prepare a deep fryer or heat oil in a pot to 180°C; it is ready when small bubbles appear on a wooden spoon stick placed in the oil.

    First coat the vegetables in the remaining flour, then dip them into the batter. Fry until golden yellow, drain on paper towels, and drizzle with lemon juice. Serve immediately.
