Fried Shrimp

Ingredients

  • 20 large shrimp (prepped except for tail segment peeled and deveined)
  • 1 tbsp freshly chopped coriander leaves
  • 1 tbsp hot paprika powder
  • Salt
  • black pepper (freshly ground)
  • 3 tbsp rice flour
  • 2 egg whites
  • 120 g bread flour
  • Vegetable oil for frying

Instructions

    Rinse the shrimp and pat dry. Mix the coriander, paprika, salt, and pepper into the flour. Toss the shrimp in the mixture, then coat with whisked egg whites. Dredge in panko crumbs and fry in hot oil 2-3 minutes per side until golden brown. Drain on paper towels.

    Serve as desired in small bowls or wrapped in parchment paper sachets. Pair with a sweet chili dip.
