Fried Rice with Sea Bass

Crispy fried rice with fresh sea bass, a vibrant Asian-inspired dish from Spoonsparrow!

Ingredients

  • 200 g rice
  • 2 Spring Onions
  • 2 Garlic cloves
  • 2 stalks lemongrass
  • 1 chili pepper
  • 2 carrots
  • 100 g Sugar snap peas
  • 50 g small baby corn
  • 100 g bean sprouts
  • 50 ml sesame oil
  • 50 ml Soy sauce
  • 4 red sea bass fillets (pre-cooked)
  • 2 tbsp sesame seeds
  • Salt
  • ground pepper
  • 4 tbsp Vegetable oil

Instructions

    Cook the rice according to package instructions and let it cool. Slice lemongrass and spring onions into rings. Cut carrots into long sticks and sugar snap peas into strips. Halve baby corn kernels, rinse bean sprouts. Halve the chili pepper, remove seeds, and finely dice with peeled garlic cloves. Heat sesame oil in a wok or skillet until very hot. Stir-fry the vegetables except for the bean sprouts until crisp, deglaze with soy sauce. Add the rice and stir-fry well. Finally fold in the bean sprouts.

    Cut the sea bass into bite-sized pieces, season with salt and pepper, and sear in a non-stick pan with vegetable oil on all sides until golden. Sprinkle with sesame seeds before serving.
