Fried Rice with Green Onions

Ingredients

  • 300 g long grain rice
  • 4 eggs
  • 1 tbsp Sesame oil
  • Salt
  • 4 Spring Onions
  • 2 tbsp peanut oil
  • black pepper (freshly ground)

Instructions

    Bring the rice to a boil in water lightly salted at about twice the amount of rice, then cover and simmer on very low heat for about 25 minutes until cooked. Let the rice cool.

    Whisk the eggs with sesame oil and a pinch of salt. Wash, trim, and finely chop the spring onions.

    Heat peanut oil in a wok, add the cooled rice and stir‑fry for 2–3 minutes. Pour in the egg mixture and continue cooking while stirring for another 2–3 minutes. Season with salt and pepper, add the chopped spring onions, and cook for an additional 1–2 minutes.

    Serve in small bowls.
