Ingredients
- 800 g starchy potatoes (cooked)
- 3 tbsp ghee
- Salt
- pepper (ground)
- 2 onions
- 1 bay leaf
- 1 tsp garam masala
- pinch ground cumin
- pinch ground coriander
- 4 eggs
- Lemon juice
Instructions

Peel the potatoes and cut them into pieces. In 2 tbsp hot ghee fry for about 5 minutes until lightly golden brown. Season with salt and pepper.

Next, peel the onions, slice them into strips and add to the potatoes along with the bay leaf, Garam Masala, cumin and coriander. Fry together for another ~5 minutes until browned.

In the remaining ghee fry four fried eggs. Season the potato mixture with salt, pepper and lemon juice, then plate with the fried eggs on top.
